1 lb beets
1 tbsp balsamic vinegar
2 tsp honey
1 tsp oil
Wash and trim beets, leaving a little stem. Bring a pot of water to boiling, then boil beets for about 40 minutes, till tender. Let cool and slip off skins. Chop beets into chunks or wedges. Stir other ingredients together in a skillet over medium heat, and add beets. Stir well and cook until beets are coated and a little caramelized.
