Roasted yams

2-3 lbs yams or sweet potatoes
2 tbsp oil
Tony Cachare's cajun spice blend

Wash and peel potatoes. Chop evenly (even sizing is important to even cooking). Add to 9 x13 baking dish. Toss in 2 tbsp oil, and sprinkle liberal amounts of Tony Chachere's spice blend over them. Roast potatoes at 450 degrees for a half over, stirring a few times so the potatoes don't get too stuck.
