Frying notes

Peanut oil has the best taste. Frying oil can be reused 3-4 times, but only for the same type foods because the oil picks up flavors. Never reuse oil from fish-frying, though. To reuse, cool oil to room temperature, then strain into jug through a coffee filter.

Drain foods on wire, not paper towels, to retain crispiness. Set wire on rimmed baking sheet for easy cleanup.
