Braised spring veggies

1 bunch asparagus (12)
2 cucumbers, peeled and quartered
1 tsp minced shallots
1 tsp minced garlic 


Heat 1 tbsp butter in a large pan over medium heat. When butter is hot, add 1 tsp shallots & 1 tsp garlic, turn heat to low and fry until fragrant.

Add asparagus and cucumber, cover with a towel-wrapped lid. Cook on low for 10 minutes, shaking a couple of times to move the veggies around. 

Test veggies for doneness & top with remaining butter, a squeeze of lemon juice, and some parmesan.
