Crock Pot Chicken Cacciatore

From The Crock Pot Cookbook

2 med tomatoes, thinly sliced
2 ½- 3 lb fryer chicken, cut up
2 cloves garlic, minced
1 1lb can tomatoes
1 8 oz can tomato sauce
1 tsp salt
¼ tsp pepper
1-2 tsp oregano leaves, crushed
½ tsp basil, crushed
1 bay leaf

Place sliced onions in bottom of crock pot. Add chicken pieces, minced garlic, tomatoes, tomato sauce, salt, pepper, herbs. Cover and cook on low for 6-8 hours (high 2 ½- 4 hours). Serve chicken pieces with sauce over hot buttered spaghetti or vermicelli.
