Potato and apple pancakes

1 lb baking potatoes, peeled
2 small Granny Smith apples, cored and peeled
1 small onion
¼ cup chopped parsley
2 eggs, beaten to mix
½ cup dry bread crumbs
2-3 tbsp cooking oil
1 tsp salt
1 tsp pepper

Dressing: combine
1/3 cup sour cream
¼ cup milk
2 tbsp chopped fresh chives or scallion tops
¼ tsp wine vinegar
½ tsp salt
¼ tsp pepper


Grate the potato, apple, and onion and transfer to a large bowl. Stir in all other ingredients, except the cooking oil.
In a large nonstick frying pan, heat 1 tbsp oil over moderate heat. Ball the potato mixture and drop onto skillet, flattening with spatula into cakes. Cook in batches, using 1 tbsp oil per batch. Cook about 3-4 min each side.
